Ingredients

· Sabudana – 1 Cup

· Grated Boiled potato – 1 

· Curd: 1 Tablespoon

· Green chilli and ginger paste

· 1/4 Teaspoon jeera seeds

· Sendha Namak or rock salt.

· Black salt to flavour (optional)

· Clarified butter or ghee, as needed for roasting

Steps to making the dish 

1. Put enough water in the sabudana to soak it for at least 30 minutes. After that, drain the water and transfer it to a basin. Cover it with a lid and set it apart for seven to eight hours.

2. Add soaking sabudana to a grinder jar and form a thick paste. Add water, grind the ingredients, and keep the batter again in a basin.

3. MiX grated boiled potatoes, curd, black salt, cumin seeds, and green chilli ginger in sabudana paste. Add some water to create a thick batter with a flowing consistency.

4. Heat a pan or tawa and grease it with preferable oil. 

5. Spread a dollop of the batter on the surface. Put a lid on it and cook it over low heat. Add some ghee and continue to cook.

6. Flip it over, continue cooking the other side once it is dark golden brown, and dispatch it on a platter.

  1. Makhana Tikki 

 Most individuals do not adhere to a rigid fast and instead eat little portions of fruits, vegetables, and other snacks throughout the day. It is one of the few foods you may consume during these fasts since it is a healthier alternative. Here is an intriguing makhana dish to eat while you fast.

 Ingredients

· Mashed Potatoes – 4 Cups 

· Roasted Makhana -1 Cup

· Chopped Green Chillies – 2 

· Fennel Seeds -1 Tsp

· Roasted Peanuts- 2 Tbsp

· Finely Chopped Coriander Leave

· Chaat Masala Powder – 1 Tsp

· Red Chilli Powder- As per taste

· Salt- As per taste

Steps to making the dish 

1. Crush 4 cups of roasted makhana and make powder. 

2. Add all the ingredients to the mashed potatoes in a bowl.

3. Make little round balls of the mixture and divide them into small sections. Flatten those balls after that.

4. After making flat balls, fry them in hot oil. 

5. Fry tikkis in hot oil till golden brown on both sides.

Take them out of the oil after they get golden brown. Now they are ready to eat with any ketchup or sauce. 

  1. Makhana Kheer 

Makhana kheer is also one of the healthiest options on a fasting day. Let’s see how to make makhana kheer for vrat.

Ingredients

· ghee- 2 Tbsp

· Makhana – 3 Cups

· milk- 1 Litre

· Cardamom Powder – Half tsp

· Sugar- 7to8 Tbsp

· Saffron- Few Strands

· Chopped Pistachios- 1Tbsp

Steps to making the dish 

1. Add the makhanas to heated ghee in a pan. Roast them till they get golden brown colour, and let them cool. 

2. Separate the makhanas into two halves. Crush the first part while setting aside the second.

3. Roast Cashew nuts in ghee until golden brown in a skillet.

4. Add the remaining makhanas to the milk after adding the crushed makhanas.

5. Over a medium burner, bring the milk to a boil. Let it simmer until it has reduced to half its original volume.

6. Be sure to stir the milk often.

7. Add sugar, saffron, and cardamom powder as soon as the makhanas soften. After five minutes of thorough mixing, turn off the flame.
